Come Cook With Us

We invite you to share the passion and philosophy behind our culinary department at Black Star Farms. In our cooking classes and NEW Winter School Series, you will learn new recipes and kitchen techniques with a chef’s demonstration and then get into the action with hands-on instruction. This is your chance to gain culinary confidence while enjoying food, wine, and great company.

Since 2006, our Estate Chef, John Korycki, has visited Italy annually, leading small groups on culinary adventures with his company, Chef JK Travels. Through his extensive travels, he has discovered many culinary inspirations and traditions that he is excited to share with you.

Classes are limited to 12 people.

Fresh Mozzarella & Pizza Cooking Class

Saturday, January 17 | 12 – 4 PM
Join us at Bistro Polaris and learn the art of making traditional Pizza Napoletana! Join Estate Chef John Korycki and our culinary team in the kitchen for a hands-on class creating your own wood-fired pizza from scratch, topped with hand-stretched fresh mozzarella. Winter School Series: Cooking with Wine 101

Take your cooking—and your wine appreciation—to new heights in this flavorful, fast-paced cooking class. You’ll explore the art of stocks and sauces through the lens of cool-climate winemaking, using Black Star Farms wines to build depth, brightness, and beautiful balance.

Winter School Series: Crostini and Bruschetta Class

Celebrate the beauty of simple ingredients in this interactive class devoted to bruschetta and crostini—the ultimate bite-sized expressions of flavor. Guided by our culinary team, you’ll prepare a variety of seasonal toppings, learn proper knife techniques, and craft perfectly toasted crostini using artisan breads. From classic tomato-basil to whipped cheeses, marinated vegetables, herbs, and wine-friendly spreads, you’ll explore how texture and acidity come together on the plate.

Valentine's Fresh Mozzarella & Pizza Napoletana Cooking Class

Gift your sweetheart an experience this year that you will both love! Join Estate Chef John Korycki and our culinary team in the kitchen for a hands-on class creating your own wood-fired pizza from scratch, topped with hand-stretched fresh mozzarella. John Korycki, Estate Chef at Black Star Farms

Chef John Korycki, a distinguished culinary professional with a rich background in Italian cuisine, joined Black Star Farms as Estate Chef in the spring of 2023. In this role, he oversees the entire food service department, including Inn guest culinary services, the Arcturos Dining Series, Bistro Polaris, and onsite catering for special events. His extensive experience and passion for farm-to-table dining are evident in the diverse and flavorful menus he curates for guests.

Prior to his tenure at Black Star Farms, Chef Korycki served as the Director for Culinary Education at Kalamazoo Valley Community College, where he was instrumental in developing the culinary curriculum and teaching future chefs. He also was the founding Executive Chef at Zazios Italian Restaurant, where he emphasized local sourcing and interactive dining experiences. Chef Korycki’s commitment to culinary excellence and education continues to enhance the gastronomic offerings at Black Star Farms, providing guests with exceptional dining experiences that reflect his dedication to quality and innovation.
