Raclette is the name of the distinctive cheese and its correlating dish that originates in the Swiss Alps, with a history that goes back hundreds of years. Once the fare of farmers and shepherds for a midday or evening meal, Raclette is often still served as it was centuries ago; rich, melted cheese is combined with potatoes, meats, vegetables, and fresh bread for a warming and hearty dish.
